This dessert is a very popular afternoon snack in the philippines. Tradionally, the rice cakes are served on banana leaves.
You need:
2 cups of rice (better if sticky)
4 cups of coconut milk
1 cup sugar
1 cup grated fresh coconut
How to do:
1. Rinse rice and place it in a saucepan
2. Add coconut milk
3. Boil for 15minutes and then simmer until rice is cooked. (should take 15 mins)
4. Mold cooked rice in small cups. Remove from cup and place each one on a tray
5. Sprinkle grated coconut and sugar on top of each mold. Serve warm or at room temperature.
